Plantation Barbados 5 Year

Barbados 5 Year Rum is the epitome of elegance and suaveness. Aged for a minimum of five years in American oak barrels, it boasts a smooth and subtle tropical taste. After the initial aging process, the rum is matured for an additional one to two years in Ferrand French oak casks, resulting in a delicate flavor profile with notes of woody and nutmeg undertones. This Barbadian-style rum is an excellent choice for classic cocktails like the Mai Tai or as an aperitif.

Nose: The opening nosing round is all about baking shop fragrances, but also pipe tobacco, toasted marshmallow; secondary whiffs after further aeration discover bacon fat, black raisin, prune.

Palate: Entry is bittersweet, roasted; midpalate is engagingly toasty, nearly fruity, as in baked orchard fruits, and resiny. Finishes medium long, chocolaty.

Barbados 5 Year cocktails

Mai Tai

30 ml Barbados 5 Year
30 ml Jamaica Vintage 2000
13 ml freshly squeezed lime juice
15 ml Pierre Ferrand Dry Curacao
7.5 ml sugar syrup
7.5 ml orgeat syrup

Pour all the ingredients into a shaker with ice cubes. Shake well and strain into a glass filled with crushed ice. You can garnish your cocktail with fresh mint and an orchid (if you have one).

Mystic Caravan

60 ml Barbados 5 Year
1 tsp of orgeat syrup
1 tsp of homemade jasmine syrup
1 drop of plum bitters

Mix everything with ice, then strain into a glass filled with ice. Garnish with a lemon zest.

Nahla

50 ml Barbados 5 Year
20 ml homemade vanilla syrup
20 ml fresh lime juice
1 teaspoon vanilla liqueur
1 sprig of rosemary

Shake and double strain into a chilled coupe glass. Garnish with a sprig of rosemary.

Plantation Stiggins' Fancy Pineapple

Fancy Stiggins' Pineapple Rum is a tribute to the beloved character Reverend Stiggins from Charles Dickens' Pickwick Papers, whose favourite drink was none other than "pineapple rum." This rum is created by infusing the barks of Victoria pineapples in Plantation 3 Stars rum, which is then further distilled. Separately, the pineapple fruit is infused in Plantation Original Dark rum. Finally, the two distillates are blended together, resulting in a rich and delicious pineapple bouquet that is accented by smoky and clove notes. The Fancy Stiggins Pineapple Rum is a true testament to the art of rum-making and a must-try for any rum enthusiast.

Stiggins' Fancy Pineapple Cocktails

Pineapple Daquiri

60 ml of Stiggin's Fancy Pineapple
15 ml of Pierre Ferrand Dry Curaçao
15 ml of homemade Falernum syrup
20 ml of fresh lime juice

Pour all the ingredients into a shaker. Shake with ice. Strain and serve.

The Kraken

50 ml Stiggin's Fancy Pineapple
10 ml Lime juice
1 dash Black walnut bitters
150 ml East Imperial Mombasa Ginger Beer
Lime wheel
Orange zest

Add all ingredients to a tall glass. Pack with ice and top with East Imperial Mombasa Ginger Beer. Garnish with a lime wheel and orange zest.

Pineapple Flamingo

60 ml Stiggin's Fancy Pineapple
150 ml East Imperial Grapefruit Soda
Lime wheel

Build in chilled Collins glass with lots of ice and garnish with a lime wheel.

Plantation Isle of Fiji

Plantation Isle of Fiji Rum is an ode to the breathtaking natural beauty of the Fiji Islands, from the pristine lagoons to the lush jungles. Made using traditional techniques and locally-sourced Fijian sugar cane, this rum is first aged in bourbon casks within the tropical climate of Fiji. It is then sailed to the southwest of France for a second maturation in French oak casks. The result of this double ageing process and Fijian know-how is a rum with warm notes of exotic fruits and raisin, that truly captures the essence of the Fiji Islands. Plantation Isle of Fiji Rum is a must-try for anyone who appreciates a delicious and authentic rum experience.

Nose: Intense, it starts on molasses, pear and varnish. It then becomes fruitier and spicier on apple, banana and gooseberry, also nutmeg and vanilla with a hint of smoke.

Palate: Rich and round, it follows the nose with vanilla fudge, honey, ginger and fruity notes of prune and coconut.Finish : Very long on dried banana, bourbon and allspice.

Isle of Fiji Cocktails

5 ml Orgeat
15 ml Cold Brew Coffee
150 ml East Imperial Grapefruit Tonic
Fresh Orange Slice

Build in a rocks glass with large cubed ice.

Nassau Collins

50 ml Isle of Fiji Rum
150 ml East Imperial Yuzu Lemonade
Dash of Orange Bitters
Fresh Orange Slices
Dried Hibiscus Flowers

Build in chilled highball glass with large cubed ice. Garnish with fresh orange slices and dried hibiscus flowers.

left Hand Kola

50 ml Isle of Fiji Rum
150 ml East Imperial Kima Kola
10 ml Sweet Vermouth
5 ml Grenadine
Dash of Chocolate Bitters
Pear Slice

Add rum, Grenadine, bitters, vermouth to a chilled lowball glass and top with East Imperial Kima Kola. Pack with cubed ice and garnish with a slice of pear.

Nose: Delicate scents of brown sugar, honey, coffee bean; later whiffs following further aeration encounter baking spices: vanilla, and cloves.

Palate: Entry is biscuity, yet is bittersweet and light-bodied. Midpalate features round, supple flavors of dark chocolate, root beer, egg cream. Finishes fast, refined. Serious white rum at its grassy, herbal best.

Trinidad Highball

50 ml Premium White Rum
150 ml East Imperial Old World Tonic
Fresh Lime
Makrut Lime Leaf

Add ice to a highball glass. Add rum and tonic to glass then stir. Garnish with Lime wedge and Makrut Lime Leaf.

Old St Tropez #2

60 ml Plantation Three Star rum
15 ml of light muscovado sugar syrup
15 ml of fresh lime juice
30 ml of fresh orange juice
1 dash of orange blossom water
2 dashes of absinthe
2 dashes of Angostura bitters over ice

Shake all the ingredients together and strain into a glass filled with crushed ice. Add the bitters and garnish with an orange zest and a mint sprig.

Tortuga Swizzle

50 ml Plantation 3 Stars rum
30 ml fresh lime juice
20 ml simple syrup
15 ml banana liqueur

Put all ingredients into the glass, then stir with a bar spoon. Add crushed ice and top with cherries.
Garnish: Meringue, cherry, mint, spoon.
